2. Whisper Antigua Gold Rum
| STILL | COLUMN | The director of the Antigua Distillery works with a French Master Blender, Antony Bento, to create this exceptional golden rum aged in Ex-Bourbon Casks for a minimum of 2 years. This is dry and smooth like a Whisper and unsweetened.
Nose: Fruity, delicate, refined and easy going. Notes of vanilla and hints of honey.
Palate: Mellow, it then becomes drier and reveals some oak tannins and peppery spices.
Finish: Fruity and long-lasting.
Distillery:
Whisper was created by two childhood friends, one of whom grew up on the very small Island of Antigua, to the north of French Guadeloupe, in the Caribbean. After the abolition of slavery, the British island was populated by Portuguese traders from Madeira who owned rum shops and founded the Antigua distillery in 1933. The distillery overlooks the main port and capital of the Island, St. John, to the North West of the Island.
The Island no longer produces its own sugar cane but imports molasses from Guyana. The distillery runs a long open-air fermentation of up to 120 hours, then tripled distilled producing rum at 95% vol. The owners have a passion for rum and love a local cocktail called “old fashion rum punch”, which sparked the idea of creating their own. |

| STILL | COLUMN | Ron Cihuatán is El Salvador’s first rum. It is made exclusively by Salvadoran hands deep within the Cihuatán Valley. This sacred land still hides the secrets of the Maya-Pipil civilization, which are the inspiration behind the complex flavors of their aged rum. In Nahuat “Cihuatán” means “the land beside the sleeping woman”. Legend has it that a Goddess came to Cihuatán many centuries ago and bestowed this land with riches and fertility. Now her spirit watches over their sugarcane fields and remains in the shape of the Guazapa Mountain.

5. Domaine de Séverin VO
| STILL | COLUMN | Séverin rum is produced by Séverin Estate, known in Guadeloupe as “Domaine de Séverin”. Séverin Estate was established at the beginning of the 19th century by Mr. Séverin who bought the Bellevue Estate. It was subsequently sold to Henri Marsolle in 1928. He then installed the famous 8-meter milling wheel located on the main artery of the big river to provide hydraulic energy for the crushing of the sugar cane in order to extract the pure sugar cane juice. The Marsolle brothers, Edouard and Joseph, took over from their father in 1952. Unfortunately, Edouard died in a tragic explosion of the boiler in 1964. This led Joseph to modernize the distillery in 1966 and install a creole column still with 19 platters. In 2014, the Marsolle family sold 65% of the business to another famous local family who owns 1000 hectares of sugar cane on the island. 95% of the rum is sold locally as white rum and only a few hundred casks are matured for longer in bourbon cognac, Bordeaux, and sherry casks. Domaine de Séverin VO is a 3-year-old Agricole Rum. It has matured in Ex-Bourbon Casks, slightly woody. This is a fruity and a bit smoky rum with aromas of vanilla.
Nose: Freshly woody, roasted nuts, quince and apple compote with notes of pepper and lime peel.
Palate: White peach, slightly smoky with subtle aromas of vanilla from the bourbon cask and an elegant finish of pepper and vanilla. |

6. Novo Fogo Familia Cachaça
| STILL | POT | The terroir of the coastal Atlantic Rainforest makes Novo Fogo cachaça unique. The home of Novo Fogo is in a little town called Morretes (Mo-HEH-tes), which is in the middle of the largest patch of protected jungle in southern Brazil. The air is clean and fragrant with tropical fruits, flowers, and the salty sea breeze. Their healthy, estate-grown sugarcane reflects this pure rainforest environment, which is why we process the cane minimally to preserve its flavor. When you open a bottle of Novo Fogo, you can smell and taste the natural wonders of southern Brazil. The ages are various, as the blend contains 1 year and 2-year-old barrel aged Cachaças in both American Oak and Brazilian Zebrawood.
Nose: Banana bread and sugarcane.
Palate: Tropical fruit, grass, cinnamon bark, and toffee.
Novo Fogo Família Cachaça appears like honey with a slight blush. Pour yourself a dram and you’ll detect aromas of banana bread and deceptively fresh sugarcane and grass. The first sip will yield flavors like walking through a summertime farmer’s market in Brazil: more ripe banana, cinnamon cookies, and tropical red fruits. Família’s finish is a nod to the presence of Brazilian zebrawood-finished cachaça in its blend—earthy and with delicate spices. |

7. Naud 15
| STILL | COLUMN | This Extra Old Rum is the result of the association of Panamanian and Charentais Master Distillers, united by Pierre Naud, around their shared passion for the Art of Distillation. Grown on the Peninsula de Azuero (Arco Seco), the sugarcane matures in ideal tropical climatic conditions. Historically cultivated for the sugar industry, they also produce the syrup and cane juice (guarapo) which boasts perfect organoleptic characteristics for the elaboration of a RON of Great Origin. The molasses, once fermented by the action of carefully selected yeast, is distilled in the traditional fashion. The exceptional quality RON traditional, which trickles out of the copper columns of 20 trays, is lavish and fruity. After a long aging in American oak casks in its homeland, following the Solera method, this RON PANAMÁ traveled across the Atlantic to come and perfect its finesse in the Charente region, inside our cool cognac cellars.
Color: Deep mahogany.
Nose: A bunch of aromas characterized by notes of coconut, Tonka beans, and vanilla sugar. The aromatic strength recalls the typicality of the sugarcane.
Palate: Generous and marked with sweet patisserie notes, licorice and cinnamon mixed with hints of wood and smoke carried by the Bourbon cask aging. Naud 15 is a ron, which will be recognized by connoisseurs for its rare elegance and persistent finish. |

8. Blackstrap Rum
| STILL | COLUMN AND POT STILL | E.R.D. Blackstrap Rum, which will be released in 2019, as a rich rum distilled in Denmark. The rich flavors derive from the different cask types which have been selected for maturation in the distilleries own warehouse. Rich in flavors from the use of different casks, like White Wine, Port, and Bourbon. All First fills.
The Enghaven Estate is owned by the Moestrup family and has been in their possession for 4 generations already. The estate is located in the Northern part of Denmark, in the small village of Mellerup, only few meters from the shoreline.
Experimenting with different cask types is a core element of Enghaven Rum Distillery. The warehouse is home to numerous casks ranging from 40 to 250 liters which previously hold wine and spirits like white wine, Sherry, Portwine or Bourbon or virgin casks made of different oaks. The distillery has been producing both pot and column still rums, but will in the future only focus on the production of pot still rums.
The E.R.D Blackstrap Rum is added with molasses to create a dark heavy character, hence the name Blackstrap.
Nose: Rich and warm. Licorice and spices with complex oak notes from the various casks used for the aging. With a hint of Madeira sweetness.
Taste: Beautifully balanced in dark flavors like berries, licorice, and burnt caramel.
Aftertaste: Long and rich with spices and caramel. |

10. Deadhead Dark Chocolate Rum
| STILL | SINGLE COLUMN AND POT STILL | Deadhead cask aged rum is housed in bottles resembling tsantsas, or shrunken heads—which many believed were kept as trophies for honor and spiritual renewal— it aims to respect the heritage of this region and captures its spirit from the bottle to the glass.
In this very same region, the first use of cacao was discovered. Its scientific name (Theobroma Cacao) translates to the Food of the Gods and is one of Mexico’s many culinary gifts to the world. Chocolate has been in Mexican culture since the Mayans and is something that’s deeply embedded in the people and the history of Mexico.
Deadhead dark chocolate rum is a complimenting line expansion, true to form with its eyes and mouth sewed shut. The shrunken head monkey bottle is befitting for a rum infused with cacao.
Cacao beans grow inside tough pods on cacao trees. When the pod falls to the ground, the seeds are trapped inside and can’t sprout into a new tree. This is where monkeys come in. They open the cacao pods and eat the sweet fruit inside, but spit out the bitter seeds, allowing cacao trees to reproduce and spread. Without monkeys, there’d be no chocolate!
Tasting notes: The essence of coffee and butterscotch on the nose, the echo of dark chocolate is restrained but solidly present in the bouquet. Dark chocolate comes to the forefront on the first sip, layered with a back note of Bing cherry and cream soda. At 70 proof, this is a delectable spirit. |

14. Cane Island Single Island Blend Trinidad
| STILL | COLUMN | Trinidad is a part of the British rum world, amongst other iconic rum countries like Jamaica, Guyana, and Barbados. Most of the British style rums are heavy in style, but Trinidad rum can be described as the lighter and more accessible version of British rums. Trinidadians love rum, the country is well known for its rum shops, which are places where Trinidadians gather to socialize, listen to music and enjoy a great glass of rum or a rum cocktail. The rum in this bottle is a blend of different rums aged up to 5 years in American white oak casks in the tropical climate of Trinidad. Maturing rum in a tropical climate is three times more intense than aging in colder climates like Scotland or North America because the high temperatures intensify the interaction between the rum and the wood.
Tasting notes: This rum has a warm floral palate with pleasant notes of toffee and caramel, followed by a very gentle finish. Drink this rum straight, on the rocks or in your favorite cocktail. |
